Sweet Potato Love

This simple dish has been a big hit around our house this week.


Sweet potatoes, onions, rosemary & a little extra virgin olive oil. Bake & savour.

Soothes 29-year-old men & 15-month-old babes alike.

Being a WAHM is working out quite well! Some days I'm still up to some obscene hour (2 or 3am) trying to get my work done, but we make it work :D
G goes to daycare here and there until we have a spot open for us later in the summer -- it's been great! Thanks for asking :)

This looks deeelish! I often make 'deconstructed perogies,' which are potatoes and onions steamed in a frying pan with salt and pepper, topped with some mayonnaise (I put mayo on my perogies). This looks like similar comfort food.

That sounds sooo good!

Recently, my favorite is sushi rice, nori, some crab meat and a little soy sauce mixed up in a bowl. So much easier than trying to roll sushi and tastes great. :)
